Fall Breakfast Favorite

We live in Texas, which means that we have to embrace fall when it’s still in the 90’s outside. A nice Fall day right now means that it’s less than 80 degrees outside and that there is possibly a breeze. As much as I am a die-hard Texan it’s no secret that we have to embrace Fall in our own way. Yesterday morning was one of those days for me. I woke up and wanted to smell cinnamon, enjoy a warm breakfast and feel like it was a chilly autumn day. Yesterday also kicked off the first day of Fun and Frugalfest where we aren’t spending money outside of our budget and we are planning a budget-friendly date night which meant whatever I was going to cook needed to come from what we had in the pantry and fridge.

That’s when I had the idea to create some super simple French Toast. There aren’t many ingredients needed and luckily the last of the previous week’s milk purchase was exactly the amount needed. Below I’ve listed the ingredients, steps and some tips on how to not screw up the first batch like I did. If you are worried about screwing them up or have never really made them then don’t worry, they are really simple. Honestly I almost had a meltdown but it’s because I left the bread in the mixture too long, but after we got that figured out they came out perfectly with almost no effort.

Ingredients: 

  • 1/4 Cup Milk
  • 1 Teaspoon Vanilla Extract
  • 1/2 Teaspoon Ground Cinnamon
  • 1 Egg
  • 4 Pieces of Bread
  • Non-stick Cooking Spray

Steps:

  1. Spray medium sized skillet with Non-stick Cooking Spray
  2.  Put medium skillet on stove on medium heat
  3. In a bowl, mix the Cinnamon, Vanilla and Egg together
  4. Pour the Milk in the bowl after the Cinnamon, Vanilla and Egg mixture is blended
  5. Pour the mixture into a shallow dish or plate
  6. Dip a piece of Bread into the mixture then flip it to the other side (Tip: Don’t leave the bread in the mixture too long soaking it up, it will start to fall apart)
  7. Put Bread in the heated skillet
  8. Wait about 2-3 minutes then flip the bread to the other side, it should be browned
  9. Remove from pan and put on a plate to cool
  10. Proceed with steps 6-9 for the remaining pieces of bread
  11. Serve

Tips: 

  • Put the milk into the mixture last it makes it easier to mix the vanilla, cinnamon and egg.
  • Stir the mixture together with a fork instead of a whisk. I tried a whisk but it didn’t mix the cinnamon in as well as the fork.
  • The cinnamon will try to clump back together, so before dipping in the remaining pieces of bread, make sure to stir the mixture again.
  • The best way I found to make sure the bread was ready to be flipped in the pan was to slide the spatula under the bread, if I was able to get under the bread then it had browned enough to flip. If the spatula sticks wait a little bit longer so that it doesn’t rip apart.

Using ingredients that I already had in my pantry and fridge I was able to make a simple and tasty Fall breakfast. Today it’s 77 degrees and I’m sipping on hot cocoa and watching football hoping for a break from the intense heat and planning my next simple Autumn inspired meal.
